Ingredients
Dried Cranberries
1.5cupsflour (organic all-purpose)
1orangeorange (zest of 1 orange)
3tbsporange juice (fresh)
3tbspunsalted butter (grass-fed, cold & cubed)
0.5cupGreek yogurt (plain, nonfat, organic)
3tbsporganic maple syrup
1tspvanilla extract
1/3cupcranberries (dried & no added sugar)
1.5tspbaking powder
0.5tspsalt
Glaze
to tasteorange juice & confectioners style monk fruit (for glaze)(mixed until desired consistency)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
Microwave cranberries in water for 1 minute, drain, and pat dry.
Mix flour, baking powder, salt, and orange zest. Cut in butter until crumbly. Stir in yogurt, then add maple syrup, orange juice, vanilla, and fold in cranberries.
Shape dough into a 3/4-inch thick circle on baking sheet. Slice into 8 wedges.
Bake for 20 minutes. Cool slightly, then drizzle with glaze and serve.
