Delight in these tender, citrus-infused scones with tart cranberries and a sweet glaze, perfect for breakfast or tea time.

Ingredients

Dried Cranberries

  • 1.5 cups flour (organic all-purpose)
  • 1 orange orange (zest of 1 orange)
  • 3 tbsp orange juice (fresh)
  • 3 tbsp unsalted butter (grass-fed, cold & cubed)
  • 0.5 cup Greek yogurt (plain, nonfat, organic)
  • 3 tbsp organic maple syrup
  • 1 tsp vanilla extract
  • 1/3 cup cranberries (dried & no added sugar)
  • 1.5 tsp baking powder
  • 0.5 tsp salt

Glaze

  • to taste orange juice & confectioners style monk fruit (for glaze) (mixed until desired consistency)

Instructions 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
  • Microwave cranberries in water for 1 minute, drain, and pat dry.
  • Mix flour, baking powder, salt, and orange zest. Cut in butter until crumbly. Stir in yogurt, then add maple syrup, orange juice, vanilla, and fold in cranberries.
  • Shape dough into a 3/4-inch thick circle on baking sheet. Slice into 8 wedges.
  • Bake for 20 minutes. Cool slightly, then drizzle with glaze and serve.

Notes

For best flavor, use fresh orange zest and high-quality cranberries.
