1cupraisins (plumped)(soaked in hot water until soft)
1 ½cupstoasted pecans
2 ½cupssweet potatoes, cooked and mashed(2-3 sweet potatoes)
Biscuits
3cupsflour
2teaspoonsbaking powder
1teaspoonbaking soda
½teaspoonsalt
2tablespoonsbrown sugar
½teaspooncinnamon
½cupcold butter
½cupchopped pecans
¾cupbuttermilk (cold)
Instructions
Preheat oven to 375°F (190°C). Prepare apple filling by mixing sliced apples with sugar, spices, salt, raisins, and chopped pecans. Spread in a baking dish.
Make biscuit dough by combining flour, baking powder, baking soda, salt, brown sugar, cinnamon, cold butter, and buttermilk until just combined. Fold in chopped pecans.
Drop spoonfuls of biscuit dough over the apple filling. Bake for 45 minutes until golden and bubbly.
Notes
For extra flavor, sprinkle with additional cinnamon before baking.
