Ingredients

Filling

  • 2 cups sugar
  • cup brown sugar
  • ½ cup cornstarch
  • 4 teaspoons cinnamon
  • 2 teaspoons powdered ginger
  • ¼ teaspoon nutmeg
  • 10 cups apples (peeled, cored and sliced) (5-6 apples)
  • 1 teaspoon salt
  • 1 cup raisins (plumped) (soaked in hot water until soft)
  • 1 ½ cups toasted pecans
  • 2 ½ cups sweet potatoes, cooked and mashed (2-3 sweet potatoes)

Biscuits

  • 3 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold butter
  • ½ cup chopped pecans
  • ¾ cup buttermilk (cold)

Instructions 

  • Preheat oven to 375°F (190°C). Prepare apple filling by mixing sliced apples with sugar, spices, salt, raisins, and chopped pecans. Spread in a baking dish.
  • Make biscuit dough by combining flour, baking powder, baking soda, salt, brown sugar, cinnamon, cold butter, and buttermilk until just combined. Fold in chopped pecans.
  • Drop spoonfuls of biscuit dough over the apple filling. Bake for 45 minutes until golden and bubbly.

Notes

For extra flavor, sprinkle with additional cinnamon before baking.
