Ingredients

Dry Ingredients

  • 1 cup gluten-free all-purpose flour (1:1 blend with xanthan gum, like Bob’s Red Mill or King Arthur)
  • 2 tbsp sugar (optional)
  • 1 tbsp baking powder
  • ¼ tsp salt

Wet Ingredients

  • 1 cup milk (dairy or plant-based)
  • 1 large egg
  • 2 tbsp melted butter or neutral oil
  • ½ tsp vanilla extract (optional)

Fruits & Toppings

  • 1 banana banana (sliced into rounds)
  • ¼ cup fresh blueberries
  • to taste Maple syrup or honey (optional)

Instructions 

  • Mix dry ingredients in a bowl.
  • Whisk wet ingredients together, then combine with dry ingredients.
  • Pour batter onto a hot griddle and cook until bubbles form, then flip.
  • Shape pancakes into bear faces and add banana slices and blueberries for features.
  • Serve with maple syrup or honey if desired.
