Ingredients
Crust
1cupsorghum flour
0.5cupbrown rice flour
0.5cuptapioca flour
1Tbspground chia seeds
0.5tspsea salt
10Tbspcold vegan butter(cut into cubes)
4-6Tbspwater(add until dough comes together)
Filling & Topping
3mediumpears(ripe but slightly firm, sliced thinly)
0.5cupbrown sugar
2.5tspground ginger powder
3Tbsplemon juice(from 1 medium lemon)
2Tbspcold vegan butter(sliced thinly)

Instructions
Mix flours, chia seeds, and salt; cut in vegan butter until sandy. Add water until dough forms, chill for 20-30 minutes.
Prepare pears by slicing thinly and set aside. Mix brown sugar and ginger.
Roll out chilled dough, fit into tart pan, and pre-bake at 400°F (204°C) for 25 minutes. Add sugar mixture, arrange pears, drizzle lemon juice, top with butter slices, and bake for 28-35 minutes until golden and tender.
