A delicious vegan and gluten-free pear tart infused with ginger, perfect for a cozy dessert or special occasion.

Ingredients

Crust

  • 1 cup sorghum flour
  • 0.5 cup brown rice flour
  • 0.5 cup tapioca flour
  • 1 Tbsp ground chia seeds
  • 0.5 tsp sea salt
  • 10 Tbsp cold vegan butter (cut into cubes)
  • 4-6 Tbsp water (add until dough comes together)

Filling & Topping

  • 3 medium pears (ripe but slightly firm, sliced thinly)
  • 0.5 cup brown sugar
  • 2.5 tsp ground ginger powder
  • 3 Tbsp lemon juice (from 1 medium lemon)
  • 2 Tbsp cold vegan butter (sliced thinly)

Additional

  • to taste Vegan vanilla ice cream
  • to taste Coconut whipped cream

Instructions 

  • Mix flours, chia seeds, and salt; cut in vegan butter until sandy. Add water until dough forms, chill for 20-30 minutes.
  • Prepare pears by slicing thinly and set aside. Mix brown sugar and ginger.
  • Roll out chilled dough, fit into tart pan, and pre-bake at 400°F (204°C) for 25 minutes. Add sugar mixture, arrange pears, drizzle lemon juice, top with butter slices, and bake for 28-35 minutes until golden and tender.

Notes

Chill the dough well for easier handling and ensure pears are sliced uniformly for even baking.
