  • 2 cups jasmine rice
  • 4 cups chicken broth
  • 1 pound chicken breasts, diced
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning

Instructions 

  • Heat olive oil in a skillet and cook diced chicken until browned, about 5-7 minutes.
  • Add minced garlic and cook for 1-2 minutes until fragrant.
  • Stir in jasmine rice, then add chicken broth and bring to a boil.
  • Reduce heat, cover, and simmer for 18-20 minutes until rice is cooked.
  • Stir in heavy cream and Parmesan cheese until creamy, then season to taste. Garnish with parsley and serve.

Notes

For a richer flavor, use freshly grated Parmesan and fresh parsley.
