A hearty and flavorful meal featuring tender garlic herb chicken served with creamy mashed potatoes and sweet glazed carrots.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • Salt and pepper to taste Salt and pepper (to taste)
  • 1 cup chicken broth
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish) parsley (for garnish)

Starch

  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons unsalted butter

Vegetables

  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons butter
  • 2 tablespoons brown sugar

Additional seasonings

  • Salt and pepper to taste Salt and pepper (for seasoning)

Instructions 

  • Season chicken with salt, pepper, oregano, and thyme. Cook in olive oil until golden, then set aside.
  • Sauté garlic in the same skillet, add broth and lemon juice, return chicken, and simmer for 5-7 minutes.
  • Boil potatoes until tender, then drain.
  • Mash potatoes with milk, butter, salt, and pepper until smooth.
  • Sauté carrots in butter, add brown sugar, cook until glazed and tender.
  • Plate chicken with mashed potatoes and glazed carrots, garnish with parsley. Serve warm.

Notes

For extra flavor, marinate the chicken beforehand or add fresh herbs to the mashed potatoes.
