Instructions
Season chicken with salt, pepper, oregano, and thyme. Cook in olive oil until golden, then set aside.
Sauté garlic in the same skillet, add broth and lemon juice, return chicken, and simmer for 5-7 minutes.
Boil potatoes until tender, then drain.
Mash potatoes with milk, butter, salt, and pepper until smooth.
Sauté carrots in butter, add brown sugar, cook until glazed and tender.
Plate chicken with mashed potatoes and glazed carrots, garnish with parsley. Serve warm.
Notes
For extra flavor, marinate the chicken beforehand or add fresh herbs to the mashed potatoes.
