This quick and delicious protein bowl combines seared steak, flavorful garlic butter, and fresh veggies for a satisfying meal.
Ingredients
Base
1cupcooked rice, quinoa, or cauliflower rice
Veggies
1cupbroccoli florets
0.5cupcherry tomatoes
1cupbaby spinach
Add-ons
1avocadosliced avocado
Protein
1lbsirloin or ribeye steak(about 450 grams)
3tablespoonsbutter
1tablespoonolive or avocado oil
3-4clovesgarlic, minced
parsley and/or chivesfresh herbs
1lemonlemon (zest and wedges)
to tastesalt and black pepper
optionalred pepper flakescrushed red pepper flakes
Instructions
Cook the base: prepare rice, quinoa, or cauliflower rice and keep warm.
Season the steak with salt and pepper, then sear in a hot skillet 2-3 minutes per side. Rest the steak.
In the same skillet, sear broccoli and peppers until crisp-tender, then remove. Add oil and sear steak, then return to pan with garlic butter, herbs, and lemon zest. Toss to combine.
Assemble bowls: spoon base into bowls, add sliced steak, veggies, spinach, and avocado. Finish with lemon, herbs, and black pepper.
Drizzle extra garlic butter over each bowl before serving.
Notes
