Instructions
Prepare and thinly slice vegetables, cook noodles if using, and press tofu. Soak rice wraps in warm water for 10-15 seconds until pliable.
Place a rice wrap on a damp surface, add a small amount of each ingredient in the center, starting with lettuce, then vegetables, protein, and optional ingredients.
Fold sides over the filling, then roll tightly from the bottom to enclose the ingredients.
Repeat with remaining wraps and fillings. Serve with dipping sauce like peanut or chili sauce.
