Ingredients

Rice wraps

  • 4 pieces rice wraps

Veggies of choice

  • 1 cup lettuce leaves

Diced melon (optional)

  • 0.5 cup diced cantaloupe or honeydew (optional)

Crushed peanuts (optional)

  • 2 tablespoons crushed peanuts (optional)

Cooked thin rice noodles (optional)

  • 0.5 cup cooked rice noodles (optional)

Sliced tofu (optional)

  • 0.5 cup sliced tofu (optional)

Instructions 

  • Prepare and thinly slice vegetables, cook noodles if using, and press tofu. Soak rice wraps in warm water for 10-15 seconds until pliable.
  • Place a rice wrap on a damp surface, add a small amount of each ingredient in the center, starting with lettuce, then vegetables, protein, and optional ingredients.
  • Fold sides over the filling, then roll tightly from the bottom to enclose the ingredients.
  • Repeat with remaining wraps and fillings. Serve with dipping sauce like peanut or chili sauce.

Notes

Keep the rolls snug but avoid tearing the wraps. Feel free to customize fillings to your taste.
