Ingredients

Dough

  • 1.5 cups all-purpose flour (spooned into measuring cup and leveled-off)
  • 0.5 teaspoon salt
  • 2 tablespoons granulated sugar
  • 12 tablespoons unsalted butter (cut into ½-in pieces, very cold)
  • 0.25 cup very cold water

Filling

  • 1.75 lbs baking apples (about 3 large)
  • 0.33 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 tablespoons unsalted butter (melted)
  • 0.125 teaspoon salt
  • 1 tablespoon all-purpose flour
  • 1 egg beaten egg
  • 2 tablespoons turbinado sugar
  • 1 tablespoon apricot jelly or jam (optional, for glaze)

Instructions 

  • Prepare the crust: combine flour, salt, sugar, add cold butter, then water; knead into a disk, roll into an 8-10 inch circle, and refrigerate.
  • Make the filling: peel, core, and slice apples; toss with sugar, vanilla, cinnamon, melted butter, and salt.
  • Roll out the dough on parchment to 14-inch circle, assemble apples on top, fold edges over, brush with egg, sprinkle sugars, and chill.
  • Preheat oven to 350°F (175°C), bake tart for 55-65 minutes until golden and apples tender, then cool.
  • Optional: heat apricot jam with water, brush over apples for glaze, then serve warm or at room temperature.

Notes

Chill the tart before baking for best results and serve on the day for optimal freshness.
