Enjoy these wholesome, homemade granola bars packed with seasonal flavors and nutritious ingredients, perfect for a quick snack or on-the-go energy boost.

Ingredients

Dried ingredients

  • 2 cups old-fashioned oats
  • 1 cup whole almonds, roughly chopped
  • ½ cup pumpkin seeds
  • 1 cup packed pitted Medjool dates
  • cup maple syrup
  • ¼ cup creamy almond butter or peanut butter
  • ¼ teaspoon salt

Dried berries

  • ½ cup dried cranberries

Instructions 

  • Preheat oven to 350ºF (175ºC). Toast oats, almonds, and pumpkin seeds on a baking sheet for 12 minutes, then transfer to a bowl.
  • Chop dates in a food processor until roughly paste-like; add to the bowl.
  • Warm maple syrup, almond butter, and salt; pour over mixture and add dried cranberries. Mix well.
  • Line an 8x8 inch pan with parchment, press mixture in, and freeze for 20 minutes.
  • Cut into 16 bars and store in an airtight container or freeze for longer storage.
