This moist and flavorful yellow squash bread is perfect for a quick snack or breakfast, combining warm spices with fresh squash.

Ingredients

Dry ingredients

  • 1.75 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt

Wet ingredients

  • 0.5 cup canola oil
  • 0.25 cup sour cream
  • 0.5 cup sugar
  • 0.5 cup brown sugar
  • 2 eggs eggs
  • 1.5 teaspoon vanilla

Main ingredient

  • 1.5 cups grated squash (about 1 medium)

Other

  • 1 cooking spray cooking spray

Instructions 

  • Preheat oven to 350°F (175°C) and spray a 9" x 5" loaf pan with cooking spray.
  • Grate the yellow squash and set aside.
  • Mix dry ingredients in a bowl. In a separate bowl, combine wet ingredients and stir in grated squash. Combine both mixtures until just blended.
  • Pour batter into prepared pan and bake for about 1 hour until golden and a toothpick comes out clean.
  • Cool in pan for 30 minutes, then remove and cool completely.

Notes

Ensure not to over-mix the batter to keep the bread light and moist.
