Ingredients

Bell Peppers

  • 4 large bell peppers (red, green, yellow, or orange)
  • 1 cup cooked rice (white, brown, or wild)
  • 1 tablespoon olive oil
  • 0.5 cup diced onions
  • 2 cloves garlic (minced)
  • 0.5 cup diced zucchini
  • 0.5 cup diced mushrooms
  • 0.5 cup canned diced tomatoes (drained)
  • 0.5 cup black beans (rinsed and drained)
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup shredded mozzarella or cheddar cheese (optional)

Fresh parsley or cilantro for garnish

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove seeds.
  • Sauté onions and garlic in olive oil until translucent, then add zucchini, mushrooms, tomatoes, beans, and spices. Cook for 5 minutes.
  • Stuff the peppers with the vegetable mixture, top with cheese if desired, and place in a baking dish.
  • Bake for 30 minutes until peppers are tender and cheese is melted. Garnish with parsley or cilantro before serving.
