Ingredients

Protein

  • 1 pounds boneless chicken thighs or breasts
  • 0.5 cup sweet chili sauce (the star ingredient)
  • 3 cloves garlic (minced)
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or brown sugar (optional)

Grains

  • 1 cup jasmine rice or basmati, cooked fluffy
  • 2 cups chicken broth or water

Vegetables

  • 1 cup bell peppers (sliced thin)
  • 0.25 cup green onions (chopped)
  • 1 cup cucumber slices or shredded carrots

Toppings & Garnishes

  • 2 tablespoons sesame seeds (toasted)
  • 0.25 cup fresh cilantro or basil

Instructions 

  • Cook rice in chicken broth or water until fluffy, about 15 minutes.
  • While rice cooks, sauté chicken with garlic and soy sauce until cooked through, about 8-10 minutes.
  • Stir in sweet chili sauce and honey (if using) into the chicken, cook for 2 minutes.
  • Assemble bowls with rice, chicken, sliced vegetables, and toppings. Garnish with sesame seeds and herbs.

Notes

For extra flavor, marinate chicken in some of the chili sauce before cooking.
