These quick and flavorful mini chicken quesadillas are perfect for a satisfying snack or light meal, packed with shredded chicken, cheese, and fresh toppings.

warmed tortillas

Instructions
Mix shredded chicken, cheese, salsa, and cilantro in a bowl.
Season with salt and pepper, then spread refried beans on half of each tortilla.
Add chicken mixture on top of beans, fold tortillas, and cook in a skillet with 1 tbsp oil until golden and cheese melts.
Repeat until all quesadillas are cooked, then serve warm with guacamole, pico de gallo, and sour cream.
