These quick and flavorful mini chicken quesadillas are perfect for a satisfying snack or light meal, packed with shredded chicken, cheese, and fresh toppings.

Ingredients

  • 1.5 cups leftover finely shredded rotisserie chicken
  • 1.5 cups shredded Mexican blend cheese
  • 1/3 cup restaurant-style salsa
  • 1/4 cup chopped fresh cilantro leaves
  • to taste Kosher salt and freshly ground black pepper
  • 1 cup refried beans (homemade or store-bought)
  • 16 street tacos flour tortillas warmed tortillas
  • 3 tablespoons canola oil (divided)
  • 1 cup guacamole
  • 1 cup pico de gallo
  • 1/4 cup sour cream

Instructions 

  • Mix shredded chicken, cheese, salsa, and cilantro in a bowl.
  • Season with salt and pepper, then spread refried beans on half of each tortilla.
  • Add chicken mixture on top of beans, fold tortillas, and cook in a skillet with 1 tbsp oil until golden and cheese melts.
  • Repeat until all quesadillas are cooked, then serve warm with guacamole, pico de gallo, and sour cream.

Notes

Use fresh tortillas for best results and serve immediately for optimal flavor.
