Ingredients

Protein

  • 1 pound Boneless, Skinless Chicken Thighs

Oil & Marinade

  • 3 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Lemon Zest
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Dried Herbs ((oregano or Italian blend))
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Vegetables

  • 2 cups Potatoes (quartered)
  • 2 cups Broccoli Florets
  • 1 tablespoon Olive Oil (for veggies)
  • 2 tablespoons Reserved Marinade (for veggies)

Dairy & Herbs

  • 1 cup Plain Greek Yogurt
  • 0.25 cup Fresh Parsley (chopped)
  • 1 tablespoon Lemon Juice
  • 1 pinch Salt
  • 1 pinch Black Pepper

Instructions 

  • Marinate chicken with lemon juice, garlic, herbs, paprika, salt, and pepper for 10 minutes.
  • Preheat oven to 400°F (200°C). Arrange chicken, potatoes, and broccoli on a sheet pan.
  • Drizzle vegetables with olive oil and reserved marinade. Roast for 30 minutes until cooked.
  • Mix Greek yogurt with lemon juice, parsley, salt, and pepper to make a sauce.
  • Serve chicken with roasted vegetables and a dollop of yogurt sauce.

Notes

Use fresh garlic for best flavor. Adjust seasoning to taste.
