Instructions
Preheat oven to 350F and grease a 12-cup muffin tin.
Mix sunflower oil, sugar, and lemon zest until well combined.
Add eggs, lemon juice, and almond milk; whisk until light and fluffy.
Combine dry ingredients; fold into wet mixture until just combined.
Spoon batter into muffin cups and bake for 40 minutes until golden and a toothpick comes out clean.
Cool muffins in the pan for 10 minutes, then transfer to a wire rack to cool completely.
