Instructions 

  • In a large pot, melt butter and sauté chopped onions until translucent.
  • Add toasted curry powder and cook for 1 minute to release flavors.
  • Stir in butternut squash, apples, and broth; bring to a boil, then simmer until squash is tender, about 20 minutes.
  • Puree the soup until smooth, then stir in apple cider, coconut milk, and season with salt and pepper.
  • Serve hot, garnished with shredded apple, a swirl of sour cream, and toasted cumin seeds.

Notes

For a vegan version, substitute butter with vegan margarine and sour cream with coconut yogurt.
