A delicious and creamy vegan pasta dish featuring sautéed mushrooms and a rich cashew sauce, perfect for a quick and satisfying meal.

12 ozozpasta (spaghetti, linguine, or fettuccine)
1 tablespoontablespoonolive oil
1 mediumpieceonion, finely chopped(about 1 cup)
3 clovesclovesgarlic, minced
12 ozozmushrooms, sliced(cremini, shiitake, or a mix)
1/2 teaspoonteaspoonsalt(adjust to taste)
1/4 teaspoonteaspoonblack pepper
1/4 teaspoonteaspoonred pepper flakes (optional)
1 tablespoontablespoonfresh thyme or dried thyme
1 cupcupraw cashews, soaked(4–6 hours or boiled for 10 minutes, then drained)
1 1/2 cupscupsvegetable broth or water
1/4 cupcupnutritional yeast
2 tablespoonstablespoonslemon juice
1 cloveclovegarlic
1/2 teaspoonteaspoonsalt(adjust to taste)
1/4 teaspoonteaspoonblack pepper
1 tablespoontablespoonolive oil or vegan butter
1/4 cupcupfresh parsley, finely chopped
Vegan parmesan (optional)
Instructions
Cook the pasta in salted boiling water until al dente, then drain and set aside.
Sauté onion and garlic in olive oil until translucent, then add mushrooms, salt, pepper, red pepper flakes, and thyme. Cook until mushrooms are golden.
Blend soaked cashews, vegetable broth, nutritional yeast, lemon juice, garlic, salt, pepper, and olive oil until smooth, adding pasta water if needed.
Add cooked pasta to the skillet with mushrooms, pour sauce over, and toss to coat. Warm for 2–3 minutes.
Serve garnished with parsley, black pepper, and vegan parmesan if desired.
Notes
For extra flavor, add a splash of vegan parmesan or red pepper flakes.
