Easy Cold Shrimp and Avocado Salad

A fresh and flavorful salad combining succulent shrimp, creamy avocado, and crisp vegetables, perfect for a quick and healthy meal.

Ingredients

Protein

  • 1 pound shrimp (peeled and deveined)

Seasonings

  • 1 teaspoon Old Bay seasoning (See notes)
  • to taste Salt and pepper

Vegetables and herbs

  • 2 tablespoons olive oil (divided)
  • 1 cup chopped avocado (sliced into 1 inch cubes)
  • 1/4 cup chopped red onion
  • 1/2 tablespoon chopped jalapeño (Adjust to taste)
  • 1 cup chopped cucumber
  • 2 tablespoons chopped, fresh cilantro
  • 8 cherry tomatoes sliced in half
  • 1/2-1 fresh lime juice of (Adjust to taste)
  • 2 teaspoons fresh, chopped basil (Can use dried)

Instructions 

  • Season the shrimp with Old Bay, salt, and pepper.
  • Cook shrimp in 1 tablespoon of olive oil for 2-3 minutes per side until bright pink. Remove and set aside.
  • Combine shrimp, avocado, tomatoes, basil, cucumber, onion, jalapeño, and cilantro in a large bowl. Add remaining olive oil and lime juice, then toss.
  • Season with salt and pepper to taste. Chill for an hour or serve immediately.

Notes

This salad is best enjoyed fresh or chilled for an hour to marinate the flavors.
