1cupshredded cheddar cheese or Monterey Jack(divided)
1cupshredded mozzarella cheese(divided)

Instructions
Heat olive oil and cook diced onion until soft. Add garlic and bell pepper; cook until fragrant.
Add ground beef; cook until browned. Stir in chili powder, cumin, and paprika; cook 1-2 minutes.
Pour in crushed tomatoes, tomato sauce, kidney beans, and beef broth. Bring to a boil, add macaroni, then simmer 10-12 minutes until pasta is al dente.
Remove from heat, stir in half the cheddar and mozzarella cheeses until melted. Top with remaining cheese, cover, and let melt for 2 minutes.
