A hearty and flavorful one-pot meal combining chili and macaroni, perfect for a quick dinner.

Ingredients

Olive Oil

  • 1 tablespoon olive oil

Vegetables

  • 1 diced onion
  • 3 cloves garlic (minced)
  • 1 diced bell pepper

Meat

  • 1 pound ground beef

Spices

  • 1-2 tablespoons chili powder (to taste)
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika

Canned Goods

  • 1 28-ounce can crushed tomatoes
  • 1 8-ounce can tomato sauce
  • 1 14-ounce can kidney beans (drained and rinsed)
  • 1 cup beef broth

Pasta

  • 8 ounces uncooked elbow macaroni

Cheese

  • 1 cup shredded cheddar cheese or Monterey Jack (divided)
  • 1 cup shredded mozzarella cheese (divided)
  • to taste salt and pepper

Instructions 

  • Heat olive oil and cook diced onion until soft. Add garlic and bell pepper; cook until fragrant.
  • Add ground beef; cook until browned. Stir in chili powder, cumin, and paprika; cook 1-2 minutes.
  • Pour in crushed tomatoes, tomato sauce, kidney beans, and beef broth. Bring to a boil, add macaroni, then simmer 10-12 minutes until pasta is al dente.
  • Remove from heat, stir in half the cheddar and mozzarella cheeses until melted. Top with remaining cheese, cover, and let melt for 2 minutes.

Notes

Adjust seasonings to taste and serve hot with your favorite toppings.
