Ingredients

Protein

  • 1 lb Boneless chicken thighs (tender and juicy)

Grains

  • 1 cup Long-grain white rice (fluffy and separate)

Broth

  • 2 cups Chicken broth (enriches the rice)

Spices & Seasonings

  • 1 tsp Black pepper (freshly ground for bold flavor)

Vegetables

  • 1 medium Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 2 tbsp Olive oil (for cooking)
  • 1 cup Bell peppers (diced)
  • 1 cup Frozen peas
  • 2 tbsp Fresh parsley (chopped)

Instructions 

  • Heat olive oil in a skillet and cook chicken thighs until browned and cooked through. Remove and set aside.
  • In the same skillet, sauté chopped onion and minced garlic until fragrant.
  • Add diced bell peppers and cook until tender.
  • Stir in rice, black pepper, and chicken broth. Bring to a boil, then reduce heat and simmer until rice is fluffy.
  • Shred cooked chicken and stir into the rice mixture along with frozen peas and chopped parsley. Cook until peas are heated through.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce before serving.
