Ingredients

Protein

  • 1 lb Boneless chicken thighs (tender and juicy)

Grains

  • 1 cup Long-grain white rice (fluffy and separate)

Broth

  • 2 cups Chicken broth (enriches the rice)

Spices & Seasonings

  • 1 tsp Black pepper (freshly ground for bold flavor)
  • 1 medium Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 2 tbsp Olive oil (for cooking)

Vegetables

  • 1 cup Bell peppers (diced)
  • 1 cup Frozen peas

Herbs

  • 2 tbsp Fresh parsley (chopped)

Instructions 

  • Heat olive oil in a skillet and cook chicken thighs until browned. Remove and set aside.
  • Sauté chopped onion and minced garlic until fragrant.
  • Add diced bell peppers and cook for 2-3 minutes.
  • Stir in rice, chicken broth, black pepper, and cooked chicken. Bring to a boil.
  • Reduce heat, cover, and simmer for 15 minutes. Stir in peas and cook for another 5 minutes.

Notes

For extra flavor, garnish with additional parsley or a squeeze of lemon.
