A simple and delicious berry cake perfect for any occasion, combining fresh berries with a moist vanilla-flavored batter.

Ingredients

Dairy and Baking

  • 113 grams melted butter
  • 0.875 cup sugar (plus 1/2 tablespoon extra)
  • 1 large egg
  • 0.75 cup milk
  • 1 tsp vanilla extract
  • 1.25 cup all-purpose flour
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 1.25 cup mixed berries (blueberry and raspberries)

Instructions 

  • Preheat oven to 350 F. Prepare an 8-inch square baking dish with melted butter.
  • Mix flour, salt, and baking powder. Beat butter and sugar, then add egg, milk, and vanilla. Combine with dry ingredients.
  • Gently fold in half of the berries into the batter, then pour into the baking dish.
  • Top with remaining berries and sprinkle with extra sugar. Bake for 40 minutes until golden and a toothpick comes out clean.
  • Serve warm, optionally with ice cream. Store leftovers covered in the fridge for up to 3 days.
