Instructions
Heat olive oil in a skillet over medium-high heat. Add ground turkey and cook until browned, about 6-8 minutes. Drain excess fat.
Stir in taco seasoning, salt, and pepper. Add diced tomatoes, black beans, and corn. Simmer for 5-7 minutes until slightly thickened.
Reduce heat to low, sprinkle cheese over the mixture, and cover for 2-3 minutes until melted.
Remove from heat, top with cilantro, jalapenos, and sour cream. Serve immediately.
Notes
For extra flavor, add a squeeze of lime before serving.
