A quick and flavorful skillet meal combining ground turkey, beans, corn, and cheese, perfect for a weeknight dinner.

Ingredients

Meat

  • 1 lb Ground Turkey
  • 1 tbsp Olive Oil
  • 2 tbsp Taco Seasoning
  • 1 can Black Beans (rinsed and drained)
  • 1 cup Sweet Corn (frozen or canned)
  • 1 can Diced Tomatoes (undrained)
  • 1.5 cups Shredded Cheese (Mexican blend or cheddar/Monterey Jack)
  • 1/4 cup Fresh Cilantro (chopped)
  • 1 piece Jalapeno (thinly sliced)
  • 1/4 cup Sour Cream

Seasonings

  • to taste Salt and Pepper

Instructions 

  • Heat olive oil in a skillet over medium-high heat. Add ground turkey and cook until browned, about 6-8 minutes. Drain excess fat.
  • Stir in taco seasoning, salt, and pepper. Add diced tomatoes, black beans, and corn. Simmer for 5-7 minutes until slightly thickened.
  • Reduce heat to low, sprinkle cheese over the mixture, and cover for 2-3 minutes until melted.
  • Remove from heat, top with cilantro, jalapenos, and sour cream. Serve immediately.

Notes

For extra flavor, add a squeeze of lime before serving.
