  • 2 medium Zucchini (Firm zucchinis or yellow squash)
  • 1 Bell Pepper Bell Pepper (Any color or use diced mushrooms)
  • 3 cloves Garlic (Fresh minced garlic preferred)
  • 1 medium Onion (Red onion for milder flavor)
  • 2 tbsp Extra Virgin Olive Oil (Can substitute with avocado oil)
  • to taste Salt and Pepper Salt and Pepper (Add herbs like Italian seasoning for complexity)
  • to taste Fresh Herbs Fresh Herbs (e.g., basil, parsley, sprinkle just before serving)

Instructions 

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and minced garlic; sauté until fragrant, about 2 minutes.
  • Add ground beef; cook until browned, about 5-7 minutes. Drain excess fat if needed.
  • Stir in sliced zucchini and diced bell pepper; cook for another 8-10 minutes until vegetables are tender.
  • Season with salt, pepper, chili flakes, and add fresh herbs just before serving.

Notes

For extra flavor, add a splash of soy sauce or Worcestershire sauce during cooking.
