A creamy and flavorful pasta dish featuring tender chicken, fresh spinach, and a rich Alfredo sauce.

Ingredients

Pasta

  • 1 lb fettuccine

Chicken

  • 1.25 lbs chicken breast, cut into 1-inch bite-sized pieces

Dairy & Fats

  • 2.5 tbsp unsalted butter
  • 1.5 cups heavy cream (room temperature)
  • 1 large egg yolk
  • 1.25 tbsp fresh lemon juice
  • 1.25 cups freshly grated parmesan cheese

Vegetables & Seasonings

  • 5 cloves garlic, freshly minced
  • 6 oz baby spinach
  • 0.5 tsp kosher salt (plus more for pasta water)
  • 0.5 tsp freshly cracked black pepper
  • 0.25 tsp red pepper flakes
  • 0.75 tsp ground nutmeg

Instructions 

  • Cook the fettuccine in salted boiling water until al dente, then drain.
  • In a large skillet, melt butter over medium heat and cook chicken until browned and cooked through.
  • Add garlic and red pepper flakes; cook for 1 minute. Stir in heavy cream, lemon juice, nutmeg, and Parmesan; simmer until thickened.
  • Stir in spinach until wilted, then add cooked pasta and toss to combine.
  • Season with salt and black pepper to taste. Serve immediately.

Notes

For a lighter version, use half-and-half instead of heavy cream.
