Cake Batter
2.75cupsall-purpose flour

0.75cupdark cocoa powder

4largeeggs, at room temperature
1cupvegetable oil
1cupwhole milk
1cuphot strong coffee
2teaspoonsalcohol free vanilla extract
0.5teaspoonalmond extract
Almond Filling
16ozmascarpone cheese, at room temperature
2cupspowdered sugar
1cupheavy cream
2teaspoonsalcohol free almond extract
0.25teaspoonsalt
Chocolate Frosting
1.5cupsunsalted butter, softened
4.5cupspowdered sugar
0.75cupdark cocoa powder
0.33cupheavy cream
2teaspoonsalcohol free vanilla extract
0.5teaspoonsalt
12ozsemi-sweet chocolate, melted and cooled
1.5cupssliced almonds, lightly toasted
Instructions
Preheat oven to 350°F (175°C). Grease and line three 9-inch pans.
Mix dry ingredients; separately combine wet ingredients. Combine wet into dry, divide batter, and bake for 25-30 minutes. Cool completely.
Prepare mascarpone filling by beating cheese, then adding powdered sugar, cream, and extracts. Make chocolate frosting by beating butter, adding powdered sugar, cocoa, cream, vanilla, salt, and melted chocolate.
Assemble cake: level layers, spread filling, stack, apply crumb coat, chill, then frost smoothly. Decorate with toasted almonds and create spiral pattern on top.
Notes
For best results, toast almonds just before decorating for added flavor.
