A vibrant and crunchy salad combining chickpeas, fresh vegetables, and a flavorful Thai-inspired dressing.

Ingredients

Canned Goods

  • 1 can chickpeas (15 oz, drained and rinsed)
  • 1 red bell pepper red bell pepper (diced)
  • 2 medium carrots (grated)
  • 1 cucumber cucumber (diced)
  • 1/4 cup fresh cilantro leaves (chopped)
  • 3 tbsp peanut butter
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup

Instructions 

  • Rinse and drain the chickpeas; pat dry.
  • Combine chickpeas, bell pepper, carrots, cucumber, and cilantro in a large bowl.
  • Whisk together peanut butter, lime juice, soy sauce, and honey until smooth.
  • Pour dressing over the salad and toss gently.
  • Chill for at least 30 minutes before serving.

Notes

For extra crunch, add chopped peanuts or cashews.
