A vibrant and crunchy salad combining chickpeas, fresh vegetables, and a flavorful Thai-inspired dressing.
Ingredients

Instructions
Rinse and drain the chickpeas; pat dry.
Combine chickpeas, bell pepper, carrots, cucumber, and cilantro in a large bowl.
Whisk together peanut butter, lime juice, soy sauce, and honey until smooth.
Pour dressing over the salad and toss gently.
Chill for at least 30 minutes before serving.
Notes
For extra crunch, add chopped peanuts or cashews.
