  • 5 cloves garlic (minced)

  • 0.25 cup sun-dried tomatoes
  • 1 cup artichoke hearts (drained and chopped)
  • 4 ounces fresh spinach
  • 1 cup heavy cream (or plant-based cream for dairy-free option)

Instructions 

  • Sauté garlic and spices in olive oil until fragrant.
  • Add shrimp and cook until pink, about 3-4 minutes.
  • Stir in sun-dried tomatoes, artichoke hearts, and spinach; cook until spinach wilts.
  • Pour in heavy cream and simmer for 5 minutes until sauce thickens.

Notes

For a lighter version, use half-and-half instead of heavy cream.
