A rich and creamy pasta dish featuring tender chicken and sautéed mushrooms, perfect for a comforting meal.

Ingredients

Pasta

  • 8 oz fettuccine or pasta of choice

Chicken

  • 2 pieces boneless, skinless chicken breasts

Seasonings

  • 1 tsp salt
  • 0.5 tsp black pepper

Cooking Oils & Fats

  • 2 tbsp olive oil
  • 2 tbsp unsalted butter

Vegetables

  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced

Liquids

  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp dried thyme
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions 

  • Cook pasta according to package instructions; drain and set aside.
  • Sauté chicken in 1 tbsp olive oil until cooked through; remove and set aside.
  • In the same pan, add remaining oil and butter, then sauté garlic and mushrooms until tender.
  • Add chicken broth, heavy cream, Parmesan, thyme, and cooked chicken; simmer until sauce thickens.
  • Combine cooked pasta with the sauce, garnish with parsley if desired, and serve.

Notes

For extra flavor, add a squeeze of lemon or a sprinkle of red pepper flakes.
