A comforting one-pan dish featuring tender chicken thighs, savory mushrooms, and creamy rice infused with herbs and lemon.

Ingredients

Protein

  • 1.25 lbs boneless skinless chicken thighs
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • to taste Kosher salt and pepper
  • 2 tablespoons olive oil
  • 8 ounces sliced mushrooms
  • 1 shallot chopped shallot
  • 2 cloves garlic minced
  • 3 cups lower sodium chicken broth (see note 1)
  • 1 cup white rice
  • 1/2 lemon juice of half a lemon
  • 4 sprigs fresh thyme stems removed
  • 1/2 cup cream (see note 2)
  • Few sprigs parsley optional
  • 1/2 cup Parmesan cheese (for serving)

Instructions 

  • Season chicken with Italian seasoning, garlic powder, salt, and pepper.
  • Heat oil in a skillet, brown chicken 2-4 minutes per side, then remove.
  • Sauté mushrooms and shallot until golden, add garlic and cook 1 minute.
  • Deglaze pan with broth, add rice, lemon, thyme, chicken, and juices; simmer 18-20 minutes until rice is tender.
  • Stir in cream gradually, sprinkle with parsley and Parmesan, then serve.

Notes

Ensure rice is fully cooked and creamy before serving for best texture.
