  • to taste Salt
  • to taste Pepper
  • 0.5 cup Flour (gluten-free option available)
  • 2 tablespoons Olive Oil (or canola or avocado oil)
  • 2 tablespoons Butter (substitute with olive oil for dairy-free)
  • 8 ounces Mushrooms (cremini or white mushrooms)
  • 1 teaspoon Italian Seasoning (or fresh herbs)
  • 3 cloves Garlic (minced)
  • 1 cup Chicken Broth (or vegetable broth for vegetarian version)
  • 2 tablespoons Lemon Juice (lime juice can be a substitute)
  • 1 tablespoon Dijon Mustard (whole grain mustard can be used)
  • 1 cup Heavy Whipping Cream (coconut cream as a dairy-free alternative)

Instructions 

  • Season chicken with salt, pepper, and Italian seasoning. Dredge in flour.
  • Heat oil and butter in a skillet; cook chicken until golden and cooked through. Remove and set aside.
  • Sauté mushrooms and garlic until tender. Add broth, lemon juice, and mustard; simmer.
  • Stir in cream and return chicken to the skillet; cook until sauce thickens.
