Ingredients

cauliflower, cut into florets

unsalted butter

shredded sharp cheddar cheese (or mozzarella/Monterey Jack blend)

Instructions
Boil or steam cauliflower until very tender, about 10-12 minutes. Drain well.
Melt butter in a skillet over medium heat until golden and nutty, about 3-5 minutes. Add garlic and cook 1 minute.
Transfer cauliflower to a food processor. Add cream cheese and heavy cream, then pulse until smooth.
Mix browned butter and garlic into cauliflower. Add cheese, salt, pepper, and paprika; stir to combine.
Adjust seasoning, fold in chives if desired, and add more cream or water if needed. Serve warm.

For extra flavor, sprinkle with additional chives or cheese before serving.
