Ingredients

Vegetables

  • 1 large head cauliflower, cut into florets
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup shredded sharp cheddar cheese (or mozzarella/Monterey Jack blend)
  • 0.25 cup heavy cream
  • 2 ounces cream cheese, softened
  • 2 tablespoons finely chopped chives (optional)
  • to taste Salt and freshly ground black pepper
  • a pinch smoked paprika (optional)

Instructions 

  • Boil or steam cauliflower until very tender, about 10-12 minutes. Drain well.
  • Melt butter in a skillet over medium heat until golden and nutty, about 3-5 minutes. Add garlic and cook 1 minute.
  • Transfer cauliflower to a food processor. Add cream cheese and heavy cream, then pulse until smooth.
  • Mix browned butter and garlic into cauliflower. Add cheese, salt, pepper, and paprika; stir to combine.
  • Adjust seasoning, fold in chives if desired, and add more cream or water if needed. Serve warm.

Notes

For extra flavor, sprinkle with additional chives or cheese before serving.
