Delight in tender salmon bites coated in a rich, creamy garlic butter sauce, perfect served over cauliflower rice or greens.

Ingredients

Salmon

  • 1 lb salmon fillet (skin removed and cut into bite-sized cubes)
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1.5 tsp garlic powder
  • to taste Salt and pepper

Garlic Butter Sauce

  • 2 tbsp butter
  • 3 cloves garlic (minced)
  • 0.33 cup heavy cream or coconut cream (for dairy-free)
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley

Optional for Serving

  • as needed Steamed cauliflower rice or regular rice
  • extra parsley (for garnish)

Instructions 

  • Toss salmon cubes with olive oil, paprika, garlic powder, salt, and pepper.
  • Heat a skillet over medium-high heat, sear salmon 2-3 minutes per side until golden. Remove and set aside.
  • Melt butter in the same pan, sauté garlic for 30 seconds.
  • Add cream and lemon juice, simmer 2-3 minutes until slightly thickened.
  • Return salmon to pan, coat with sauce, garnish with parsley, and serve over rice or cauliflower rice.

Notes

Ensure not to overcook the salmon for best tenderness.
