This creamy pasta sauce combines cottage cheese and Parmesan for a rich, protein-packed topping that elevates any pasta dish.
Ingredients

cottage cheese (2% or full-fat)

parmesan cheese (grated)

pasta water
(reserved from cooked pasta)

Instructions
Cook pasta until al dente, then reserve 1/2 cup of pasta water and drain.
In a blender, combine cottage cheese, Parmesan, garlic, salt, black pepper, red pepper flakes, and pasta water. Blend until smooth.
Heat olive oil in a pan over medium heat, then add the blended sauce and cook for 2-3 minutes until warmed through.
Mix the sauce with cooked pasta, adding more pasta water if needed for desired consistency.
Sprinkle with nutritional yeast if desired and serve immediately.
Notes
For extra flavor, add fresh herbs or a squeeze of lemon.
