This creamy pasta sauce combines cottage cheese and Parmesan for a rich, protein-packed topping that elevates any pasta dish.

Ingredients

Dairy

  • 1 1/2 cups cottage cheese (2% or full-fat)
  • 1/3 cup parmesan cheese (grated)
  • 1 clove garlic
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/2 cup pasta water (reserved from cooked pasta)
  • 1 tablespoon olive oil

Additional

  • to taste nutritional yeast

Instructions 

  • Cook pasta until al dente, then reserve 1/2 cup of pasta water and drain.
  • In a blender, combine cottage cheese, Parmesan, garlic, salt, black pepper, red pepper flakes, and pasta water. Blend until smooth.
  • Heat olive oil in a pan over medium heat, then add the blended sauce and cook for 2-3 minutes until warmed through.
  • Mix the sauce with cooked pasta, adding more pasta water if needed for desired consistency.
  • Sprinkle with nutritional yeast if desired and serve immediately.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon.
