A hearty and comforting casserole combining ground beef, mushrooms, and rice in a creamy sauce, baked to perfection.

Ingredients

Meat and Vegetables

  • 1 lb ground beef
  • 1 cup chopped mushrooms
  • 1 small onion (diced)

Grains and Dairy

  • 1 cup uncooked white rice
  • 10.5 oz cream of mushroom soup
  • 2 cups beef broth
  • ½ cup sour cream
  • 1 tsp garlic powder
  • to taste Salt and pepper

Optional Topping

  • 1 cup shredded cheddar cheese (for topping)

Instructions 

  • Preheat oven to 350°F (175°C) and grease a 9x13-inch dish.
  • Brown ground beef in a skillet, add mushrooms and onion, cook until tender. Drain excess fat.
  • Mix beef, vegetables, rice, soup, broth, sour cream, garlic, salt, and pepper in a bowl.
  • Pour into dish, cover with foil, and bake for 50-60 minutes until rice is tender.
  • Optional: uncover, sprinkle cheese, and bake 5 more minutes until melted.

Notes

For a cheesier topping, add more cheese or bake uncovered longer.
