A warm, spiced granola perfect for fall mornings or a healthy snack. Easy to customize with your favorite nuts and dried fruits.

Ingredients

Dry ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup chopped nuts (pecans, walnuts, or almonds)
  • ½ cup pumpkin seeds (pepitas)
  • ½ cup shredded coconut (optional)
  • 2 tsp pumpkin pie spice (or a mix of cinnamon, nutmeg, ginger, and cloves)
  • ½ tsp salt

Wet ingredients

  • ½ cup pumpkin purée
  • cup maple syrup or honey
  • ¼ cup coconut oil (melted) or olive oil
  • 2 tsp vanilla extract
  • ½ cup dried cranberries or raisins (add after baking)

Instructions 

  • Preheat oven to 325°F (160°C) and line a baking sheet with parchment.
  • Mix dry ingredients in a large bowl; whisk wet ingredients separately.
  • Combine wet and dry, then spread evenly on the baking sheet.
  • Bake for 35–40 minutes, stirring halfway, until golden.
  • Cool completely, then stir in dried cranberries. Store in an airtight container.
