Ingredients

Bread

  • 2 slices whole grain bread (or your preferred bread)

Cottage Cheese

  • 0.5 cup cottage cheese (small curd, 2% or full-fat)

Berries

  • 0.5 cup mixed fresh berries (blueberries, sliced strawberries, raspberries, blackberries)

Honey

  • 1 teaspoon honey (or maple syrup)

Chia Seeds or Hemp Hearts

  • 1 teaspoon chia seeds or hemp hearts (optional)

Cinnamon

  • Pinch cinnamon (optional)

Fresh Mint Leaves

  • to taste fresh mint leaves (for garnish, optional)

Sliced Almonds or Chopped Walnuts

  • to taste sliced almonds or chopped walnuts (for crunch)

Granola

  • to taste granola (for crunch)

Lemon Juice

  • a squeeze fresh lemon juice

Vanilla Extract

  • to taste vanilla extract (mixed into cottage cheese)

Nut Butter

  • to taste nut butter (drizzled on top)

Instructions 

  • Toast the bread slices until golden and crispy.
  • Spread 1/4 cup cottage cheese on each toast slice.
  • Arrange berries on top of the cottage cheese, then drizzle with honey.
  • Sprinkle seeds, cinnamon, and garnish with mint leaves, nuts, granola, lemon juice, vanilla, and nut butter as desired.
