Instructions
Place the egg in a small pot, cover with cold water, bring to a boil, then cover and remove from heat. Let sit for 10 minutes, then transfer to ice water, peel, and set aside.
Toast the bread slices until golden and lightly crisp.
Mash the avocado and chopped hard-boiled egg in a bowl. Mix in paprika, salt, black pepper, Dijon mustard, and green onion.
Spread the mixture onto the toasted bread slices. Top with everything-but-the-bagel seasoning and hemp seeds. Serve immediately.
