Ingredients

Egg

  • 2 slices bread (sourdough, whole wheat, or your favorite)
  • 0.5 ripe avocado avocado (the kind that gives just a little when you squeeze it)
  • 0.5 cup cottage cheese (full-fat) (tastes the creamiest, but any works)
  • 0.125 teaspoon paprika (adds a hint of warmth)
  • 0.125 teaspoon salt
  • 0.125 teaspoon black pepper
  • 1 teaspoon Dijon mustard (my secret weapon for depth)
  • 1 tablespoon sliced green onion
  • 1 tablespoon everything-but-the-bagel seasoning (because why not?)
  • 1 tablespoon hemp seeds (for extra crunch and nutrition)

Instructions 

  • Hard-boil the egg: place in boiling water for 10 minutes, then cool in ice water, peel, and chop.
  • Toast the bread slices until golden and lightly crisp.
  • Mash the avocado and chopped egg in a bowl, then stir in seasonings and green onion.
  • Spread the mixture generously on each toast, then sprinkle with seasoning and hemp seeds.
  • Serve immediately while the toast is crisp and fresh.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce.
