  • 8 ounces Whole Wheat Linguine or Thin Spaghetti (Substitute with udon or rice noodles if desired)
  • 0.25 cup Soy Sauce (Low-sodium options available)
  • 2 tablespoons Sesame Oil (Use sparingly)
  • 2 tablespoons Rice Vinegar (White vinegar can work as an alternative)
  • 1 teaspoon Ground Ginger (Adjust if using fresh ginger)
  • 2 cloves Garlic (Minced, fresh garlic is ideal)
  • 1 tablespoon Roasted Sesame Seeds (Can be omitted if desired)
  • 1 medium Carrot (Grated, bell peppers are a great alternative)
  • 3 stalks Green Onions (Diced, regular onions can be a substitute)

Instructions 

  • Cook the noodles according to package instructions, then drain and rinse with cold water.
  • In a bowl, whisk together soy sauce, sesame oil, rice vinegar, ground ginger, and minced garlic.
  • Combine cooked noodles, grated carrot, and diced green onions in a large bowl.
  • Pour the dressing over the noodle mixture and toss to coat evenly.
  • Sprinkle with roasted sesame seeds and serve chilled.

Notes

For extra flavor, add a splash of lime juice or chopped peanuts.
