A fresh and vibrant Middle Eastern salad featuring parsley, mint, tomatoes, and bulgur wheat, perfect as a side or light meal.

Ingredients

Bulgur Wheat

  • 0.5 cup bulgur wheat - coarse or medium grind, well rinsed

Vegetables

  • 2 medium tomatoes - diced
  • 1 piece English cucumber - peeled and diced

Herbs

  • 2 cups fresh parsley - finely chopped
  • 0.25 cup fresh mint leaves - finely chopped

Liquids & Seasonings

  • 3 tablespoons fresh lemon juice
  • 0.25 cup extra-virgin olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper - freshly ground

Instructions 

  • Place bulgur in a bowl, cover with boiling water, and soak for 15-20 minutes. Drain and fluff.
  • Combine chopped parsley, mint, tomatoes, and cucumber in a large bowl.
  • Add soaked bulgur to the vegetables and mix gently.
  • Whisk lemon juice, olive oil, salt, and pepper; pour over salad and toss to coat.
  • Chill for at least 30 minutes before serving to meld flavors.

Notes

For best flavor, prepare ahead and let sit to develop taste.
