Instructions
Combine almond milk and apple cider vinegar; set aside to curdle.
Mix flour, baking powder, cinnamon, and salt in a large bowl.
Whisk flax seeds into the milk mixture until frothy, then add to dry ingredients with water, oil, syrup, and vanilla. Fold in figs and walnuts.
Preheat waffle iron, let batter rest, then cook waffles until golden, spraying with oil as needed. Serve topped with extra walnuts and fig halves.
Notes
For extra flavor, add a dash of nutmeg or serve with additional maple syrup.
