Delight in these hearty whole wheat waffles infused with cinnamon, topped with sweet figs and crunchy walnuts for a nutritious breakfast treat.

Ingredients

Dairy & Liquids

  • 2 cups almond milk (vanilla or plain), or your fave non-dairy milk
  • 1 tablespoon apple cider vinegar

Dry Ingredients

  • 2 cups whole wheat pastry flour ((all purpose works, too))
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Ground Flax Seeds

  • 2 tablespoons ground flax seeds
  • 1/2 cup water

Wet Ingredients

  • 3 tablespoons olive oil
  • 3 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract

Add-ins

  • 1 cup dried black mission figs (stem nub removed, thinly sliced)
  • 1 cup walnuts (roughly chopped)

Instructions 

  • Combine almond milk and apple cider vinegar; set aside to curdle.
  • Mix flour, baking powder, cinnamon, and salt in a large bowl.
  • Whisk flax seeds into the milk mixture until frothy, then add to dry ingredients with water, oil, syrup, and vanilla. Fold in figs and walnuts.
  • Preheat waffle iron, let batter rest, then cook waffles until golden, spraying with oil as needed. Serve topped with extra walnuts and fig halves.

Notes

For extra flavor, add a dash of nutmeg or serve with additional maple syrup.
