Ingredients

  • 2 each acorn squash, cut in half, seeds removed
  • 3 tablespoons unsalted butter
  • 3 cups diced yellow onion
  • 2 stalks celery, diced
  • 3 cups diced apple, cored and seeds removed (about 2 large apples)
  • 1/2 cup dried cranberries
  • 2 tablespoons maple syrup
  • 1/3 cup water
  • 1/2 teaspoon cinnamon
  • Pinch salt
  • Pinch black pepper

Instructions 

  • Preheat oven to 375°F (190°C). Place squash halves face down with water and bake for 40 minutes.
  • Meanwhile, melt butter and sauté onions and celery until soft. Add apples, cranberries, maple syrup, water, and cinnamon; cook until apples soften.
  • Season with salt and pepper, then remove from heat. Fill baked squash with the apple mixture.
  • Return stuffed squash to oven and bake for an additional 15-20 minutes until tender. Serve warm.
