A fresh and vibrant salad combining sweet peaches, cherry tomatoes, basil, and mozzarella for a delightful summer dish.

Ingredients

Fruits and Vegetables

  • 2 pieces ripe peaches, pitted diced into 1/2-inch cubes
  • 1 pint cherry tomatoes, halved (2 cups)
  • 1.5 cups fresh chopped basil leaves
  • 8 ounces mozzarella pearls
  • 0.25 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • to taste salt and pepper
  • optional balsamic glaze for topping (for drizzling)

Instructions 

  • Add all ingredients to a large mixing bowl. Toss gently to combine.
  • To serve, top with a drizzle of balsamic glaze if desired.

Notes

Use ripe peaches for the best flavor and adjust salt and pepper to taste.
