A rich and moist chocolate cake layered with creamy peanut butter frosting, perfect for any celebration.

Ingredients

Dry ingredients

  • 1.75 cups All-purpose flour
  • 0.75 cup Cocoa powder - Unsweetened
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar - Light or dark

Wet ingredients

  • 2 eggs Eggs - Room temperature
  • 0.5 cup Vegetable oil - Or melted butter
  • 1 cup Buttermilk - Or milk 1 tbsp vinegar
  • 1 tbsp Vinegar
  • 1 cup Hot coffee - Slightly cooled
  • 2 tsp Vanilla extract
  • 1.5 tsp Baking soda
  • 1.5 tsp Baking powder
  • 0.5 tsp Salt

Frosting ingredients

  • 1 cup Creamy peanut butter - Or crunchy if preferred
  • 0.5 cup Butter - Softened
  • 2.5 cups Powdered sugar
  • 4 tbsp Heavy cream (Adjust for consistency)
  • 1 tsp Vanilla extract
  • 1 pinch Salt - Optional
  • 0.5 cup Mini chocolate chips - For garnish or mix-in
  • 0.5 cup Chopped peanuts - For texture
  • 0.25 cup Chocolate ganache - For drizzling
  • 0.5 cup Crushed peanut butter cups - For topping

Instructions 

  • Preheat oven to 350°F (175°C), grease two 9-inch pans, and line with parchment paper.
  • Mix dry ingredients in one bowl and wet ingredients in another, then combine and stir in hot coffee.
  • Divide batter evenly into pans and bake for 28-32 minutes, until a toothpick comes out clean.
  • Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  • Beat butter until fluffy, add peanut butter, then gradually mix in powdered sugar, cream, and vanilla to make frosting.
  • Assemble the cake: layer, frost, decorate with chocolate chips, chopped peanuts, ganache, and peanut butter cups.

Notes

For extra moistness, add a tablespoon of mayonnaise to the frosting.
