A refreshing and creamy cold soup perfect for warm days, made with ripe avocados and fresh herbs.
Ingredients

ripe avocados
(About 1 cup mashed)

plain yogurt
(Can substitute with dairy-free yogurt)

(Seeded and minced)

(Chopped, plus extra for garnish)

Instructions
Cut avocados in half, remove pits, and scoop flesh into a blender.
Add vegetable broth, yogurt, lime juice, garlic, and jalapeño to the blender. Blend until smooth.
If too thick, gradually add more broth until desired consistency is reached. Stir in chopped cilantro and season with salt and pepper.
Chill in refrigerator for at least 30 minutes. Serve garnished with cilantro and cherry tomatoes if desired.
Notes
For extra flavor, add a drizzle of olive oil before serving.
