A fresh and healthy chickpea salad tossed in a creamy yogurt dressing, perfect for a quick lunch or light dinner.

Ingredients

Main ingredients

  • 1.5 cups cooked chickpeas (or 15 oz can)
  • 0.5 cup cucumber (diced)
  • 0.25 cup onion (chopped)
  • 0.25 cup cilantro leaves (chopped)
  • 0.5 cup greek yogurt (or hung curd)
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon lime juice or vinegar
  • 1 clove garlic (minced)
  • 0.25 teaspoon cumin powder

Instructions 

  • Whisk together yogurt, olive oil, lime juice, garlic, cumin, salt, and pepper in a bowl.
  • Add chickpeas, cucumber, onion, and cilantro; toss to combine.
  • Adjust seasoning as needed.
  • Refrigerate for at least 1-2 hours before serving.

Notes

This salad tastes best after chilling for a couple of hours to let flavors meld.
