Chickpea Chocolate Chip Blondie Bars (Gluten-Free)

These gluten-free chickpea blondie bars are rich, chewy, and packed with chocolate chips, perfect for a healthy treat or dessert.

Ingredients

Cooking Spray

  • 1 can 15 ounces chickpeas, rinsed and drained
  • 0.5 cup all natural peanut butter (or almond butter)
  • 0.33 cup pure maple syrup or agave nectar (or honey if not vegan)
  • 2 teaspoons vanilla
  • 0.5 tsp salt
  • 0.25 tsp baking powder
  • 0.25 tsp baking soda
  • 0.33 cup vegan (or regular) chocolate chips plus 2 tablespoons
  • 2 tablespoons chocolate chips (for topping)

Coarse sea salt

Instructions 

  • Preheat oven to 350°F (175°C) and spray an 8×8 inch pan with nonstick cooking spray.
  • Add all ingredients except chocolate chips to a food processor and blend until smooth.
  • Fold in 1/3 cup of chocolate chips into the batter.
  • Spread batter evenly in the pan, sprinkle remaining chocolate chips on top, then bake for 20-25 minutes.
  • Cool for 20 minutes, sprinkle with sea salt, then cut into 16 bars and store in the fridge.

Notes

Use dark chocolate for less sugar, and spray your spatula with cooking spray for easier spreading.
