Ingredients

Protein

  • 1 pound diced boneless skinless chicken breast

Fruit

  • 1 whole pineapple (halved and scooped out)

Vegetables

  • 1 package Fresh Cut sauté vegetable kit

Sauces & Marinades

  • 1 bottle Signature Select Sesame and Ginger Teriyaki marinade
  • 4 tbsp Signature Select Sweet Chili Sauce
  • 2 tbsp Signature Select Garlic Chili Crunch
  • 1 tsp O Organics Sesame Seeds

Grains

  • 2 cups Signature Select Long Grain Whole Grain Brown Rice

Water

  • 2 cups water

Additional

  • Signature Select Soy Sauce Signature Select Soy Sauce

Instructions 

  • Marinate chicken cubes with half of the teriyaki sauce for 30 minutes.
  • Open vegetable kit, add remaining marinade, shake, and set aside.
  • Cut pineapple in half, scoop out flesh, and dice ½ cup of pineapple.
  • Cook rice in rice cooker or Instant Pot for 15 minutes, then keep warm.
  • Preheat griddle, spray with cooking spray, then stir-fry chicken and vegetables separately until cooked and crisp-tender.
  • Combine chicken and vegetables, add soy sauce, then stir in chopped pineapple. Cook for 2 more minutes.
  • Fill pineapple bowls with rice, top with stir-fry, drizzle with chili sauces, sprinkle sesame seeds, and serve hot.

Notes

For extra flavor, marinate the chicken longer or add a squeeze of lime before serving.
